Oil Infused Recipe : Lemon Blueberry Granola

This recipe is made in the slow-cooker and would be the perfect thing to have on hand for a quick breakfast or afternoon snack! - Lauren Dunaway

INGREDIENTS

  • 1/2 cup honey

  • 1/4 cup molasses

  • 1/2 cup coconut oil

  • 10 drops Lemon Vitality

  • 4 cups quick-cook oats

  • 2 cups slivered almonds

  • 1/2 cup chopped pecans

  • 2 Tbs chia seeds

  • 1 tsp unflavored protein powder or hemp powder of choice (you could use YL Pure Protein Vanilla Spice and it would be delicious!)

  • 1 cup dried blueberries and/or cranberries

INSTRUCTIONS

  1. Turn crockpot on high and combine honey, molasses, oil, and Lemon Vitality oil, stir until melted together

  2. In a separate bowl mix together the nuts, oats, chia seeds, and protein powder or hemp powder

  3. Pour into crock pot and stir well

  4. Let cook 1 hour 30 minutes, stirring every 30 minutes to avoid burning

  5. Add in dried cranberries or blueberries, and let cook 30 more minutes

This would be great served over yogurt or on its own! You could even roll it into balls and freeze it to have snack bites!
