Oil Infused Recipe : Peppermint Patty

When December comes all I want is things that involve peppermint, and maybe peppermint and chocolate. This homemade spin on a traditional favorite only has 5 ingredients and sounds like the tastiest treat! -Lauren Dunaway

INGREDIENTS

  • 1/2 cup coconut oil

  • 3-4 tablespoons honey

  • 1/2 t vanilla

  • 6-10 drops Peppermint Vitality

  • 2/3-3/4 cups chocolate chips, melted

INSTRUCTIONS

  1. In a mixer, mix the coconut oil, honey, and vanilla until very smooth

  2. Add the Peppermint Vitality, tasting as you go to decide how minty you want them!

  3. Place the mixture in the freezer for 10-15 minutes to allow it to slightly harden

  4. Once the mixture is firm enough to handle, divide the coconut oil mixture into 12 portions, and roll them into small balls

  5. Place the balls on a cookie sheet lined with parchment paper. Gently flatten them to form a disc

  6. Place the cookie sheet back in the freezer for 10-15 minutes to allow them to firm up

  7. While the discs are chilling, melt the chocolate chips

  8. Remove the discs from the freezer and dip them into the melted chocolate. Place them back onto the parchment paper and allow to set

This makes about 12 patties so you can adjust accordingly. After they are done store them in the fridge so they don’t melt!
