Oil Infused Recipe : Vegan Citrus Cheesecake

This recipe sounds so delicious and claims that you can’t even tell it doesn’t actually have cream cheese in it! It does require some prep work but is quick to make after that and you can save this post or go to the Young Living New Zealand blog to find the recipe directly! You do need to chill it after, so this would be a recipe to make the day before or the morning of! -Lauren Dunaway

CRUST INGREDIENTS

  • 2 cups pitted soft dates

  • 2 cups walnuts, almonds, or pecans

  • pinch of salt

  • 2 drops Lemon Vitality

CASHEWS CHEESECAKE FILLING INGREDIENTS

  • 2 cups raw cashews, soaked

  • 2 tbsp fresh lemon juice

  • 3 tbsp coconut oil, melted

  • ½ cup unsweetened coconut cream (full fat, stirred)

  • ½ cup maple syrup

  • ½ tsp vanilla extract

  • 6 drops Lemon Oil

  • 4 – 6 drops Citrus Fresh Oil

  • ½ tsp fine sea salt

  • ½ cup finely chopped kiwi (reserve to add to filling after blending)

FOR THE TOPPING OR OPTIONAL PUREE

  • 3 – 5 kiwis peeled and sliced

  • 2 tbsp maple syrup (if using purree)

  • 2 drops Lemon Oil (if using puree)

INSTRUCTIONS

  1. To make the crust process the dates in a food processor until they form a ball.

  2. Remove the dates and add the nuts to the processor, add salt and lemon oil, and process into a meal.

  3. Add dates and nuts into the processor together to make a dough.

  4. Line a medium-sized springform pan and spoon the date mixture into the tin and press the mixture evenly around the tin and up the sides.

  5. To make the filling, place all filling ingredients in a blender and mix until smooth.

  6. Stir in ½ cup of finely chopped kiwi, if using into the filling mix, blend by hand, and then taste the filling add a little more maple syrup and/or lemon oil if you like.

  7. Pour the filling in the prepared springform pan and tap the tin on the counter a few times to release any air bubbles, then cover with plastic wrap or baking paper weighted down with a large plate and freeze until hard approx. 6 hours.

Once It's ready to serve you can top it with fresh kiwis or a kiwi puree made by blending kiwis, maple syrup, and Lemon Vitality!
