Oil Infused Recipe : Lavender Lemon Ice Cream

I don’t know what it is about homemade ice cream but it’s one of my favorite summer treats! The family memories of hearing the ice cream maker running or that first taste after it’s done! We love making all kinds in the summer, especially after we go blueberry picking or get fresh peaches. This recipe reminds me of something I had at the Young Living Lavender Farm in Mona, Utah so I had to share it here! -Lauren Dunaway

INGREDIENTS

  • ·2 cups heavy cream (see note below about a dairy-free option!)

  • 1 cup milk of choice

  • 2 tablespoons vanilla extract

  • 1/3 cup sweetener of choice (recommendations include maple syrup, raw honey, or coconut sugar)

  • 2 to 3 drops Lavender Vitality

  • 2 to 3 drops Spearmint Vitality

  • 1 to 2 drops Lemon Vitality

INSTRUCTIONS

  1. Place all ingredients in a blender.

  2. Then puree for about 10 seconds to dissolve and incorporate the sweetener.

  3. Freeze in ice cream maker according to manufacturer’s instructions.

  4. Garnish with fresh berries or even edible flowers if you're feeling fancy!

Here is the original recipe and you could easily make this dairy-free! I’ve made a lot of dairy-free ice creams and it’s hard to get the right consistency, but I’ve found that a mixture of cashew milk and/or cashew yogurt and canned coconut milk does the trick!
