OIl Infused Recipe : Tuscan Pasta Salad

 

I always forget how much I love pasta salad in the summer! Now, we aren’t talking about the traditional mayonnaise filled ones you used to see at potlucks, although those can be yummy too! We are talking about a fresh, vegetable-packed option tossed with a delicious dressing made with essential oils! I love taking something like this to a cookout or having at home with something off the grill. - Lauren

SALAD INGREDIENTS

  • Two 19 oz. packages cheese tortellini pasta (or any pasta including GF would do!)

  • 1/2 cup sliced olives

  • 1/2 cup artichoke pieces

  • 1/2 cup mini pepperoni or salami

  • 1/2 cup chopped red peppers (roasted or fresh)

  • 1/2 cup diced tomatoes (sundried or fresh)

  • 1 cup arugula or spinach

DRESSING INGREDIENTS

INSTRUCTIONS

  1. Following the instructions on the packaging, cook the pasta, drain, and set aside to cool.

  2. While the pasta is cooling, combine all the dressing ingredients in a shaker bottle or glass jar, and shake well to combine.

  3. In a large bowl, combine all the salad ingredients, pour the dressing on, and toss to combine.

  4. Sprinkle with salt and pepper (to taste) and serve!
