Oil Infused Recipe : Honey Cinnamon Caramel Corn

 

Who loves popcorn?! I know there is a very divided sweet vs. savory popcorn opinion, and I’m not usually one to reach for caramel corn, but this recipe sounds delicious, and I added in some essential oils to make it even tastier!

INGREDIENTS

  • 1 cup unpopped popcorn kernels

  • 1/2 cup butter or coconut oil

  • 1/2 cup honey

  • 1/2 cup brown sugar or coconut sugar

  • Pinch sea salt

  • 1/2 teaspoon baking soda

  • 1 teaspoon vanilla

  • 1-2 drops Cinnamon Bark Vitality (could sub Thieves Vitality too!)

INSTRUCTIONS

  1. Pop the popcorn and place it in a large bowl. We loved and used this way to pop all summer.

  2. In a medium saucepan, melt your honey, butter, sugar, and salt. Bring to a gentle simmer and cook/stir for around 5 minutes.

  3. Remove from the heat and stir in the baking soda, vanilla, and essential oil. It will foam up a bit, but that’s OK. Simply stir it back down.

  4. Working quickly, pour the caramel sauce over the popcorn and use a wooden spoon, mix and stir the sauce into the popcorn.

  5. Once the caramel sauce and popcorn is fully incorporated, you can set aside for it to set or bake it at 250 degrees for 30-45 minutes, checking and stirring frequently.

This would be fun to make for treats for neighbors or for a fun outdoor movie night!
