Oil Infused Recipe : Lemon Cream Cheese Cookies

These cookies are fluffy and light and perfect for summer! And don't keep scrolling If you are dairy free, I've had a lot of success with dairy-free cream cheese and you could easily substitute! -Lauren Dunaway

INGREDIENTS

  • 2 ounces cream cheese (or dairy-free alternative)

  • 6 tablespoons of unsalted butter softened (or substitute)

  • 1/4 cup plus 1 tablespoon powdered sugar plus more for rolling the cookies in.

  • 3/4 cup white sugar

  • 1 egg

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1 3/4 cup flour

  • 5-10 drops Lemon Vitality*

INSTRUCTIONS

  1. Heat the oven to 350 degrees.

  2. Cream the butter, cream cheese and sugars together until smooth.

  3. Add the essential oil drops, vanilla and eggs and mix again.*

  4. In a separate bowl mix together all of the dry ingredients so they can become well incorporated into the dough.

  5. Add the dry ingredients to the wet ingredients and mix well.

  6. Scoop cookies onto a baking sheet and bake for 9-10 minutes, remove from the oven and dust with powdered sugar.

*When cooking with essential oils it is recommended to start with fewer drops, you can even use the toothpick method swirling drops In the batter. Start with 5 drops and add more to your liking, remembering the oils won't be as potent in the baked cookies.

This recipe reminds me of these lemon and lime cookies my roommates would bring from a famous bakery in Savannah, so I'm definitely recreating these in a GF, DF version!
